Beef and Bean Enchilada Casserole
I didn't invent this recipe but I wish I had! It's so yummy and a change from the typical taco/fajitas mexican meal. Brian and I both loved it, and it didn't take long to make!
Ingredients:
8 oz. ground beef
1/2 chopped onion
1- 15 oz. can pinto beans, rinsed and drained
1- 4 oz. can diced green chiles, undrained
1 tsp. chili powder
1/2 tsp ground cumin
1- 8 oz. carton sour cream
2 Tbsp. all-purpose flour
1/4 tsp. garlic powder
8- 6 in tortillas
1- 10 oz. can enchilada sauce
1 cup shredded cheddar cheese
1. Preheat oven to 350 F. Lightly grease a 2 qt. baking dish. In a large skillet, cook beef and onion. Drain fat. Stir pinto beans, chiles, chili powder and cumin into meat mixture.
2. In a bowl, mix sour cream, flour, enchilada sauce and garlic powder until combined.
3. Arrange half the tortillas in bottom of prepared baking dish. Top with half of the meat mixture, then half the sour cream mixture. Repeat in same order.
4. Cover with foil. Bake about 30 mins or until heated through. Remove foil and sprinkle casserole with cheese, then bake 5 more minutes.
Serves 6 people.
